Mum's Fruit Cake Recipe

Mum has made this cake for the family ever since I was a wee boy! It appeared as a treat at Christmas and my birthday (I liked it allot you see)

Its had a chequered history as mums oven is an old gas unit, which blows out on a low setting when the wind blows down the chimney. So she has had to improvise for some time now, some years its great, some years, even the dog rejected it. But using a good oven its a great cake every time, try it, I have all my life!

Only recently has mum put the Alcohol back in, she thinks where old enough now to taste the true recipe

Ingredients

3/4 lb Castor Sugar

3/4 lb Butter (I Prefer low salt)

7 eggs (61 gms each)

1 teaspoon Lemon Essence

6 tablespoons Sweet Sherry (or similar ie Muscat etc.)

1 lb Plain Flour

2 teaspoons Baking Powder

1 lb Sultanas

1/2 lb Raisins (cut Fine)

1/2 lb flaked Almonds (get some whole almonds for the top,  OR any other nut you like)

1 or 2 Packets of Crystallized Cherries

Method

Prepare 2 8inch Baking Pans

In a large bowl, cream Butter and Sugar

Add the eggs one at a time, mixing them in after each addition

add lemon essence and "Sherry"

Add baking powder to flour and sift into mixture and Mix through

Add fruit then nuts, mix in

Add mixture to prepared baking pans and add some whole nuts to the cake top for decoration.

COOK:  at 160oC for 1.5 - 2 hours in an electric fan forced oven (or until cooked)
