MethodPrepare 2 8inch Baking Pans
In a large bowl, cream Butter and Sugar
Add the eggs one at a time, mixing them in after
each addition
add lemon essence and "Sherry"
Add baking powder to flour and sift into mixture
and Mix through
Add fruit then nuts, mix in
Add mixture to prepared baking pans and add some
whole nuts to the cake top for decoration.
COOK: at 160oC for 1.5 - 2 hours in an electric fan
forced oven (or until cooked)
